Cannelle et sucre sanguin

Des chercheurs ont mesuré à quelle vitesse se vidait l'estomac de 14 sujets en bonne santé avec des niveaux normaux de glycémie à jeun après qu'ils ont consommé 300 g de pudding ou 300 g de pudding avec 6 g de cannelle.
Ils ont constaté que la cannelle augmentait de 34,5 à 37 % le temps que l'estomac prenait pour se vider, retardant ainsi la montée des niveaux de glucose sanguin qui suit un repas. La cannelle n'avait pas d'effet sur la satiété.
